Vlastne M\u00f4j Dobr\u00fd Za\u0165 tvrd\u00ed, \u017ee nem\u00f4\u017ee jes\u0165 surov\u00e9 jablk\u00e1.<br>Rada by som zvalila moju nechu\u0165 ku kravsk\u00e9mu mlieku na nejak\u00fa lakt\u00f3zov\u00fa intoleranciu, ale \u010do si budeme hovori\u0165. Aj keby som mala bezlakt\u00f3zov\u00e9 mlieko, tak by som ho nevypila, \u010do by \u010do bolo. Tu mus\u00edm samozrejme podotkn\u00fa\u0165, \u017ee tieto nechute s\u00fa jednoducho d\u00f4sledkom \u013eudskej rozmaznanosti, s\u00favisiacou s prebytkom,  v ktorom \u017eijeme. Akon\u00e1hle by sme sa museli pot\u00fdka\u0165 s ak\u00fatnym nedostatkom, tak som si ist\u00e1, \u017ee po troch t\u00fd\u017ed\u0148och hladomoru, by som s ve\u013ekou chu\u0165ou zjedla aj konsk\u00e9 m\u00e4so a zapila to mliekom. V \u010dasoch hladomoru, asi v\u0161etko funguje len na princ\u00edpoch. Napr\u00edklad nekanibalizova\u0165, alebo nedotknute\u013enos\u0165 dom\u00e1cich mil\u00e1\u010dikov.  Hoci , pre\u017eiv\u0161\u00ed \u010dlenovia  rugbyov\u00e9ho t\u00edmu z Uruguaja , po hav\u00e1rii lietadla v And\u00e1ch, by n\u00e1m o tom mohli  \u010do to poveda\u0165. <br>Ko\u017en\u00e9 alergie v na\u0161ej rodine, je vec in\u00e1. O tom by som V\u00e1m vedela zase ja a n\u00e1\u0161 Kubko Caban, povyklada\u0165. Ale o tom inokedy.<br>Ke\u010f pr\u00eddem do Bratislavy, tak si v\u017edy,  v\u017edy objedn\u00e1me s Dobrou Cerkou Radkou , vegetari\u00e1nsku pe\u010den\u00fa hus s dusenou \u010dervenou kapustou a kned\u013eou. <br>A aj ja,  aj Dobr\u00e1 Cerka , rodine robievame strukovinov\u00e9 fa\u0161\u00edrky&#8230;\u010di \u0161o\u0161ovicov\u00e9, \u010di c\u00edcerov\u00e9. <br>A ke\u010f sa op\u00fdta Moja Dobr\u00e1 Svokra Akyna, \u010do m\u00e1 uvari\u0165 pre m\u0148a a jej syna, tak jednohlasne obaja povieme&#8230;s\u00f3jov\u00e9 pl\u00e1tky s om\u00e1\u010dkou a ry\u017eou. <br>A v chladni\u010dke m\u00e1vam v\u017edy nejak\u00e9 tofu.<br>A Dobr\u00fd Man\u017eel neskuto\u010dne t\u00fa\u017ei, po obilninov\u00fdch fa\u0161\u00edrkach, ktor\u00e9 robievala  Akyna  v \u010dasoch jeho, ml\u00e1deneck\u00e9ho \u017eivota.<br>Nie sme vegetari\u00e1ni. <br>Tieto jedl\u00e1 jeme preto, lebo n\u00e1m jednoducho chutia.<br>V \u017eivote adolescentov asi pr\u00edde nejako k obdobiu, ke\u010f im prestane chuti\u0165 m\u00e4so. Postretlo to Moju Dobr\u00fa Cerku Radku a postretlo to aj Moju Dobr\u00fa Vnu\u010dku Dorku. Radka milovala svie\u010dkov\u00fa bez m\u00e4sa, vypr\u00e1\u017ean\u00fd reze\u0148 so zemiakovou ka\u0161ou bez rez\u0148a a podobne. Svojho \u010dasu jed\u00e1vala len pr\u00edlohy a bezm\u00e4sit\u00e9 jedl\u00e1. Ale ne\u0161tylizovala sa do postoja vegetari\u00e1na, proste mala obdobie, \u017ee jej to nechutilo. U Dorky som si nie ist\u00e1, preto\u017ee u\u017e som s \u0148ou nie tak \u010dasto, aby som to vedela presne definova\u0165. Ona si spokojne d\u00e1 \u017eemli\u010dku so \u0161unkou, ale ke\u010f som jej dala napr\u00edklad na v\u00fdber  pe\u010divo a k tomu nakr\u00e1jan\u00fa ve\u013ek\u00fa misu zeleniny alebo ovoc\u00ed\u010dka, tak s preh\u013eadom zjedla najprv zeleninu, potom ovocie a ro\u017etekom sa len dopchala a dala dolu \u0161unku. A milovala taliansku kuchy\u0148u, kde si d\u00e1vala \u0161pagety, ktor\u00e9 nemali m\u00e4sov\u00fa zlo\u017eku. V\u0161etky druhy m\u00e4sa opisuje , ako &#8222;\u017eu\u017e\u013eav\u00e9&#8220;. A t\u00e1 \u017eu\u017e\u013eavos\u0165 nedefinuje, \u017eeby to m\u00e4so bolo tvrd\u00e9, alebo \u017euvav\u00e9, alebo tak\u00e9 nie\u010do. Nevie to pop\u00edsa\u0165 a ja by som to nazvala, nechu\u0165 k m\u00e4su. Skr\u00e1tka, m\u00f4\u017ee spokojne existova\u0165 bez m\u00e4sa.<br>Dobr\u00e1 \u010desk\u00e1 \u0161vagrin\u00e1 Ka\u010denka, ona je in\u00fd pr\u00edpad, o nej by som aj mohla nap\u00edsa\u0165, \u017ee je alergick\u00e1 na \u017eivo\u010d\u00ed\u0161nu bielkovinu, \u017ee jej sp\u00f4sobuje ko\u017en\u00e9 probl\u00e9my.  Nestala sa vegetari\u00e1nkou, ale d\u00e1va si pozor.<br>Tak\u017ee \u00e1no, existuj\u00fa \u013eudia, \u010do vyl\u00fa\u010dili ur\u010dit\u00e9 potraviny, preto\u017ee im sp\u00f4sobuj\u00fa zdravotn\u00e9 probl\u00e9my. Nevybrali si t\u00fato vo\u013ebu, bola im nadelen\u00e1 a musia s t\u00fdm existova\u0165.  Oni si svoj jed\u00e1lny l\u00edstok  prisp\u00f4sobili a \u017eij\u00fa \u0161\u0165astne.<br>Potom existuj\u00fa \u013eudia, \u010do sa stali vegetari\u00e1nmi, alebo r\u00f4znymi in\u00fdmi -i\u00e1nmi z presved\u010denia. Nemaj\u00fa \u017eiadne intolerancie, na ur\u010dit\u00e9 l\u00e1tky v potravin\u00e1ch , ale skr\u00e1tka, ich \u017eivotn\u00fd n\u00e1zor im nedovol\u00ed zobra\u0165 do \u00fast, to k \u010domu maj\u00fa odpor. Oni tie\u017e \u017eij\u00fa svoj \u0161\u0165astn\u00fd \u017eivot. <br>N\u00e1m, \u010do jeme v\u0161etko,  sa zd\u00e1 ich skladba jedla z\u00fafalo obmedzen\u00e1 a oni sa z\u00fafalo p\u00fdtaj\u00fa, ako m\u00f4\u017eeme jes\u0165 to \u010do jeme. Nepozn\u00e1m \u017eiadneho prav\u00e9ho &#8211; i\u00e1na osobne a nem\u00e1m sa koho op\u00fdta\u0165, ako to maj\u00fa t\u00edto presved\u010den\u00ed odmieta\u010di v pr\u00edpade, ke\u010f by trpeli nedostatkom. \u010ci tak\u00fd vegetari\u00e1n z presved\u010denia,  by dok\u00e1zal zjes\u0165 m\u00e4so. <br>Za podskupinu odmieta\u010dov z presved\u010denia, pova\u017eujem niekoho, kto odmietne nie\u010do konzumova\u0165, ak maj\u00fa mo\u017enos\u0165 odmietnutia.<br>Napr\u00edklad ja. <br><br>Kupujem z\u00e1sadne vajcia od sliepok z vo\u013en\u00e9ho chovu, aj ke\u010f s\u00fa  aj trikr\u00e1t drah\u0161ie ako be\u017en\u00e9 vajcia.  Nie je to preto, \u017ee s\u00fa&#8230; bla bla bla zdrav\u0161ie a chutnej\u0161ie a ..bla bla bla. Je to preto, lebo mi je t\u00fdch sliepok v klietkach a hal\u00e1ch \u013e\u00fato. Darmo mi Karel, \u010do je macher cez po\u013enohospod\u00e1rstvo \u017eivo\u010d\u00ed\u0161ne aj rastlinn\u00e9 , vysvet\u013eoval, ako to tie sliepky v hlav\u00e1ch maj\u00fa a ako to s nimi je. Darmo mi hovoril, \u017ee na prilepovanie pierok do ka\u017ed\u00e9ho kart\u00f3nov\u00e9ho obalu s vajciami z vo\u013en\u00e9ho chovu, maj\u00fa chovatelia sliepok, vlastn\u00e9ho \u010dloveka, aby sme verili, \u017ee tie sliepky ozaj zn\u00e1\u0161aj\u00fa niekde \u0161\u0165astn\u00e9 a vo\u013en\u00e9, na zelenej l\u00fake, \u017ee je to len \u010dist\u00e1 strat\u00e9gia a marketing. Jedin\u00e9 \u010do dosiahol, bolo to, \u017ee som si v\u0161imla, \u017ee ozaj v ka\u017edom kart\u00f3ne s vajciami z vo\u013en\u00e9ho chovu, je nen\u00e1padne pohoden\u00e9 pierko. DM si u\u017e zvykol, ko\u013eko stoja tieto vaj\u00ed\u010dka a u\u017e prestal upada\u0165 do k\u00f3my z tej ceny. Ale. Zase to neznamen\u00e1, \u017ee ke\u010f by dosiahli tieto vaj\u00ed\u010dka ur\u010dit\u00fd  horn\u00fd limit, nez\u00e1le\u017e\u00ed \u010di finan\u010dn\u00fd, alebo nejak\u00fd in\u00fd, nek\u00fapim aj vajcia nie z vo\u013en\u00e9ho chovu.  <br>Alebo na\u0161a Ma\u0165ka Cabanov\u00e1. Ona nejed\u00e1va  m\u00e4so zo zvierat, ktor\u00e9 maj\u00fa &#8222;nos&#8220;. Tak\u017ee jed\u00e1va len hydinu a ryby. A nejed\u00e1va z &#8222;nosat\u00fdch&#8220;,  ani ich produkty. Tak\u017ee ke\u010f som urobila pag\u00e1\u010de bez \u0161kvariek, tak mi bola nesmierne v\u010fa\u010dn\u00e1 a zjedla ich za misu.  Takto aj var\u00ed pre svoju rodinu, ale zase im ni\u010d nezakazuje jes\u0165 niekde inde a som presved\u010den\u00e1, \u017ee v pr\u00edpade nejakej v\u00e1\u017enej udalosti, by vedela ust\u00fapi\u0165 trochu stranou, aj \u010do sa t\u00fdka jej osobn\u00e9ho stravovania.<br>No a potom existuj\u00fa \u013eudia, \u010do sa nesmierne radi \u0161tylizuj\u00fa do postavy nejak\u00e9ho odmieta\u010da. Z\u00e1le\u017e\u00ed od ich hrania  tohto postoja na ich okolie, \u010di odmietaj\u00fa z presved\u010denia, alebo odmietaj\u00fa kv\u00f4li zdraviu.<br>Napr\u00edklad jeden \u013eudko,  ktor\u00e9ho pozn\u00e1m z &#8222;po\u010dutia&#8220;. Tvrd\u00ed o sebe, \u017ee prestal jes\u0165 m\u00e4so a stravuje sa pod\u013ea z\u00e1sad ajurv\u00e9dy.  Tak v poriadku ajurv\u00e9da , aspo\u0148 si mysl\u00edm, nezakazuje jes\u0165 m\u00e4so, ale on tvrd\u00ed, \u017ee jemu u\u017e m\u00e4so ani v\u00f4bec nechut\u00ed a prestal ho jes\u0165. No hej, ale na pracovnej akcii sa zavrel do kuchynky a zjedol tam s\u00e1m krabi\u010dku \u0161kvarkovej n\u00e1tierky tak, \u017ee si ju vytieral ro\u017ekom a potom sa dorazil misou klob\u00e1sov\u00fdch chu\u0165oviek.  Ve\u010f \u00e1no, ja mu doprajem, nie\u017ee nie, ale nech potom svoje tvrdenia dopln\u00ed&#8230;..ale st\u00e1va sa, \u017ee to poru\u0161\u00edm, lebo dostanem na to m\u00e4so predsa len chu\u0165 a \u017eeriem to ako prav\u00fd Slov\u00e1k.<br>Teraz pred Ve\u013ekou Nocou som sa v\u00fdborne pobavila . V nejakom \u010dl\u00e1nku sa p\u00edsalo o trad\u00edcii pe\u010denia ve\u013ekono\u010dn\u00fdch baran\u010dekov. A r\u00f4zny zn\u00e1mi \u013eudia z \u010deskoslovensk\u00e9ho bulv\u00e1ru tam hovorili ak\u00fdch pe\u010d\u00fa. Nejak\u00e1 opern\u00e1 spev\u00e1\u010dka n\u00e1m tvrdila, \u017ee ona mus\u00ed piec\u0165 baran\u010dekov dvoch. Jedn\u00e9ho norm\u00e1lneho a jedn\u00e9ho bezlepkov\u00e9ho, preto\u017ee m\u00e1 ve\u013ek\u00fa intoleranciu na lepok (mo\u017eno nie ona, ale niekto z rodiny) No a hovorila pr\u00e1ve o tom bezlepkovom, \u017ee ako ho pe\u010die. &#8230;&#8230;.. &#8222;no a predt\u00fdm ako cesto nalejem do formy, tak ju poriadne vyma\u017eem a d\u00f4kladne vysypem, aby sa vyklopil pekne vcelku.  Je jedno \u010di pou\u017eijem hladk\u00fa, alebo polohrub\u00fa, alebo hrub\u00fa m\u00faku&#8220;. To\u013eko k bezlepkov\u00e9mu baran\u010dekovi. <br>Niekto m\u00f4\u017ee na n\u00e1s hra\u0165 dokonca dvojit\u00fa formu. Tento poch\u00e1dza zo \u0161upl\u00edka &#8222;upe\u010dieme si zdrav\u00fd korpus z maku a mandl\u00ed&#8220;. Ak si niekto mysl\u00ed, \u017ee  ke\u010f niekto nahrad\u00ed m\u00faku, mand\u013eami a makom, a ten cukor, maslo a rum ost\u00e1va, stane sa to zdrav\u00fdm jedlom, tak to je potom  \u010dlovek  ve\u013emi, ve\u013emi nerozumn\u00fd.  Asi ako ka\u017ed\u00fd, kto upe\u010die jablkov\u00fd kol\u00e1\u010d a nahrad\u00ed hladk\u00fa m\u00faku celozrnnou a nazve to &#8222;zdrav\u00fd&#8220; jablkov\u00fd kol\u00e1\u010d. Zdrav\u00e9 by to bolo v pr\u00edpade, \u017eeby v\u0161etky suroviny nechal v skrini a zjedol by len to jablko&#8230;nepostr\u00fahan\u00e9 a neobielen\u00e9.<br>Tak\u017ee kv\u00f4li tomu, \u017ee tam nem\u00e1me m\u00faku, ale mak a mlet\u00e9 mandle, tento korpus zdrav\u00fd rozhodne nie je, je to kalorick\u00e1 zbyto\u010dnos\u0165, ktorou si tr\u00e1vime na\u0161e organizmy a chutia n\u00e1m. \u010eal\u0161ia vec, \u017ee to  niekto nielen\u017ee nazve &#8222;zdrav\u00e9&#8220;, ale aj,  \u017ee je to &#8222;bezlepkov\u00e9&#8220;. A nafotil tam suroviny, ktor\u00e9 id\u00fa do cesta. Pr\u00e1\u0161ok do pe\u010diva, ktor\u00fd odfotil rozhodne bezlepkov\u00fd nie je.<br>Autor tohto receptu n\u00e1m vysvetlil, pre\u010do nepou\u017e\u00edva \u017eelatiny, ale agar.  <br>To preto, lebo je vegetari\u00e1n a prie\u010di sa mu v z\u00e1kuskoch pou\u017e\u00edva\u0165 nie\u010do v \u010dom s\u00fa zvy\u0161ky zvierat (\u017eelat\u00edna) a preto pou\u017e\u00edva agar, ktor\u00fd sa vyr\u00e1ba z morskej riasy. Je tak\u00e9 zvl\u00e1\u0161tne, \u017ee sa mu ako vegetari\u00e1novi neprie\u010dila pou\u017ei\u0165 v tom istom z\u00e1kusku , \u017eelat\u00edna , ktor\u00fa pou\u017eil na vrchn\u00fa zrkadlov\u00fa \u017elt\u00fa polevu.  (edit : ospravedl\u0148ujem sa autorovi.  \u017del\u00e9, ktor\u00e9 pou\u017eil na pr\u00edpravu polevy, je na rastlinnej b\u00e1ze, tak\u017ee v tomto smere som ho ve\u013emi nepekne o\u010diernila. )<br>Ohliadnuc od somar\u00edn, ktor\u00e9 by sa dali pop\u00edsa\u0165 pri tomto recepte, tak tento z\u00e1kusok upiekol  autor n\u00e1ramne dobre a ve\u013emi dobre popisne.  A mo\u017eno len bla bla bla re\u010di nech\u00e1pem,  preto\u017ee ja som absol\u00fatny v\u0161e\u017eravec a nedok\u00e1\u017eem pochopi\u0165 rozdiely , medzi r\u00f4znymi parametrami odmieta\u010dov. <br>Vybrala som si ten z\u00e1kusok hlavne kv\u00f4li tomu, \u017ee tam pou\u017e\u00edval pr\u00e1ve ten agar. <br>Doteraz som robila len so \u017eelat\u00ednou a m\u00e1m k tomu ve\u013ek\u00fd re\u0161pekt a toto bolo prv\u00fdkr\u00e1t, \u010do som robila s agarom a pod\u013ea postupu, to i\u0161lo ve\u013emi dobre. Mami\u010dka pou\u017e\u00edvala cel\u00fd svoj cukr\u00e1rensk\u00fd \u017eivot agar a chcela som si to vysk\u00fa\u0161a\u0165, s re\u0161pektom ak\u00fd c\u00edtim aj ku agaru. <br>Dopadlo to skvele, a\u017e na ozdoby, ale to tie\u017e dopadlo nakoniec dobre.
