Oni to vraj v Jihlave takto jed\u00e1vali.<br>Aj som sa to takto nau\u010dila \u2013 s ur\u010dit\u00fdmi vylep\u0161eniami \u2013 a teraz mi to pr\u00edde ako \u00faplne norm\u00e1lne jedlo.<\/p>\n\n\n\n<p>Prem\u00fd\u0161\u013eala som, pre\u010do to takto mami\u010dka s tat\u00edkom nejed\u00e1vali.<br>A mysl\u00edm si, \u017ee som na to pri\u0161la.<\/p>\n\n\n\n<p>\u00daden\u00e9 m\u00e4so sa u n\u00e1s nekupovalo.<br>A\u017e ke\u010f sa mi narodila Dobr\u00e1 Cerka, pam\u00e4t\u00e1m si, \u017ee som prv\u00fdkr\u00e1t k\u00fapila rolku v sie\u0165ke \u2013 a aj to len preto, lebo ju kupovali moje kolegyne. Boli to akur\u00e1tne gazdin\u00e9, v\u0161etko me\u0161\u0165anky. Z dediny bola len D\u00e1\u0161a Milanov\u00e1 a t\u00e1 ju nekupovala. Ja som sa nechala strhn\u00fa\u0165 \u0160\u00e1rkou a Mari\u0161kou.<\/p>\n\n\n\n<p>Raz som nevedela, \u010di to m\u00e1m vari\u0165 v tej sie\u0165ke alebo ju da\u0165 dolu. Tak som ju dala dolu \u2013 a mala som z toho roz\u010faven\u00fa hrudu.<br>No bolo to pred \u0161tyridsiatimi rokmi, nedivte sa.<\/p>\n\n\n\n<p>U n\u00e1s sa \u00fadili rebr\u00e1 \u2013 norm\u00e1lne na dvore v udiarni.<br>Na oblo\u017een\u00fa misu sme d\u00e1vali klob\u00e1sy, \u0161unku a k\u00fapensk\u00e9, moravsk\u00e9 m\u00e4so.<br>\u00daden\u00e9 m\u00e4so, ktor\u00e9 by sa dalo kr\u00e1ja\u0165 na centimetrov\u00e9 pl\u00e1ty a jes\u0165 s ka\u0161ou, sme nemali.<\/p>\n\n\n\n<p>\u00daden\u00e9 rebr\u00e1 sme d\u00e1vali do kapustnice, fazu\u013eovice a \u0161o\u0161ovice.<br>A ke\u010f sme ich jedli \u201esamotn\u00e9\u201c, m\u00e4so sa p\u00e1ralo ako nite a \u017euvali sme a \u017euvali.<br>Nedalo sa to dobre ani prekroji\u0165.<br>Ako pansk\u00e1 pan\u0161tina sa to jes\u0165 naozaj nedalo.<\/p>\n\n\n\n<p>Bolo b\u00e1je\u010dn\u00e9, nie \u017ee nie. Ke\u010f som ho um\u00fdvala pred varen\u00edm, ruky mi vo\u0148ali dymom, k\u00fdm som si ich dvakr\u00e1t neumyla mydlom.<br>A ke\u010f sa udiarni\u010dka rozobrala a zbalila do bud\u00facej zimy, m\u00e4so sme si rozobrali a dala som ho do mrazni\u010dky. Do samostatn\u00e9ho \u0161upl\u00edka, d\u00f4kladne zaizolovan\u00e9 v s\u00e1\u010dkoch, aby mi r\u00edbezle odlo\u017een\u00e9 na bublaninu nezasmradli od dymu. A aj tak som ka\u017ed\u00e9 kuracie stehno c\u00edtila za klob\u00e1sou.<\/p>\n\n\n\n<p>Karcinog\u00e9n ako svi\u0148a, ale fantasticky dobr\u00fd.<\/p>\n\n\n\n<p>Ke\u010f sme u\u017e nemali vlastn\u00e9 \u00faden\u00e9, ob\u010das som k\u00fapila \u00faden\u00e9 koleno \u2013 ale moji rodi\u010dia ani n\u00e1hodou. Mami\u010dka mala otr\u010den\u00fa gambu, \u017ee to je \u00faden\u00e9 studen\u00fdm dymom, \u017ee to nie je dobr\u00f4 a ona to jes\u0165 nebude. Basta.<\/p>\n\n\n\n<p>A \u010dasy sa zmenili.<br>A kadejak\u00e9ho \u00faden\u00e9ho sa v\u00e1\u013ea v ka\u017edej predajni ne\u00farekom.<\/p>\n\n\n\n<p>Chv\u00ed\u013eu som bola v euf\u00f3rii a kupovala som tie v\u00e1kuovo balen\u00e9, predvaren\u00e9, pln\u00e9 vody.<br>To \u00e1no, to sa kr\u00e1ja jedna b\u00e1se\u0148 a d\u00e1 sa to jes\u0165 aj so zemiakovou ka\u0161ou.<\/p>\n\n\n\n<p>Potom som za\u010dala kupova\u0165 na Gazdovsk\u00fdch dvoroch \u00faden\u00e9, ktor\u00e9 bolo tvrd\u00e9 a muselo sa vari\u0165 aj hodinu, aj hodinu a pol.<br>Nie je zl\u00e9, ale nie je to to, na \u010do si pam\u00e4t\u00e1m.<\/p>\n\n\n\n<p>A je ve\u013emi \u010dudn\u00e9, \u017ee som pr\u00e1ve tak\u00e9 objavila v Mn\u00edchove.<br>A nie v \u0161pecializovanej predajni, ale v najoby\u010dajnej\u0161om hypermarkete.<br>Dov\u00e1\u017ea sa z Rak\u00faska a je to firma \u0160imi\u010d Speck \u2013 chorv\u00e1tske recept\u00fary. Robia najlep\u0161ie \u0161kvarky na svete. A verte mi, v mojich \u00fastach bola nejedna \u0161kvarka.<\/p>\n\n\n\n<p>Robia aj klob\u00e1sy, ale tie nie s\u00fa ono \u2013 m\u00e1lo cesnaku, sk\u00f4r na priamy konzum.<br>Slovensk\u00e9 s\u00fa najlep\u0161ie, lebo s\u00fa cesnakov\u00e9 a daj\u00fa sa vari\u0165.<\/p>\n\n\n\n<p>Slanina \u2013 bombov\u00e1.<br>Ale \u00faden\u00e9 m\u00e4so!!!<\/p>\n\n\n\n<p>Ako keby som si ho pr\u00e1ve priniesla z kochu z Podkon\u00edc.<br>A vtedy som si uvedomila, pre\u010do sa u n\u00e1s \u00faden\u00e9 m\u00e4so s pr\u00edborom nejed\u00e1valo.<br>Ned\u00e1 sa.<br>Medzi zubami v\u00e1m ostane to\u013eko \u00faden\u00fdch nit\u00ed, \u017ee ak nem\u00e1te medzizubn\u00fa ni\u0165, zo\u0161aliete.<br>Jes\u0165 sa d\u00e1 len po vlase.<\/p>\n\n\n\n<p>Po uvaren\u00ed ho kr\u00e1jam t\u00fdm najostrej\u0161\u00edm no\u017eom, \u010do m\u00e1m \u2013 a e\u0161te si ho priostrujem.<br>V\u00fdvar z toho m\u00e4sa spieva piese\u0148 n\u00e1dhern\u00fa.<\/p>\n\n\n\n<p>DM toto chorv\u00e1tske , \u00faden\u00e9 nemus\u00ed, lebo je pr\u00edli\u0161 v\u00fdrazn\u00e9. Ja, diev\u010da zvyknut\u00e9 na \u0161tip\u013eav\u00fd dreven\u00fd dym,  si k tomu bla\u017eene privoniavam, ale jes\u0165 som si tak\u00e9to, odvykla tie\u017e.<br>Ob\u010das ho ale k\u00fapim, hlavne do fazu\u013eovej polievky. A ke\u010f nakr\u00e1jam m\u00e4so na kocky, DM sa vie dojes\u0165 do milej chuti.<\/p>\n\n\n\n<p>K\u00fapim ho tak dvakr\u00e1t\u2013trikr\u00e1t do roka.<br>Aj teraz, ke\u010f som ho videla, o\u010di mi jedli a k\u00fapila som.<br>Urobila som hrachov\u00fa ka\u0161u, \u0161unkofleky \u2013 a st\u00e1le mi ostal k\u00fasok prerastan\u00e9ho rebra.<\/p>\n\n\n\n<p>A tak som sa pustila do t\u00fdchto pirohov.<\/p>\n\n\n\n<p>Ke\u010f\u017ee chcem rozl\u00ed\u0161i\u0165 horehronsk\u00e9 gule a tieto pirohy, prist\u00fapila som k jemnej\u0161ej \u00fadenej plnke , spracovan\u00e9 a\u017e do \u00fadenej m\u00e4sovej peny.<br>Robila som to prv\u00fdkr\u00e1t a mala som obavy, \u010do na to DM.<br>On na tak\u00e9 sedliacke jedl\u00e1 nie je nau\u010den\u00fd.<\/p>\n\n\n\n<p>Ve\u013emi ma prekvapil.<br>Jedol aj na obed, aj ve\u010der. Kame\u0148 zo srdca.<\/p>\n\n\n\n<p>Len mi povedal, \u017ee nabud\u00face to chce v\u00fdraznej\u0161ie \u2013 plnku s cesnakom, major\u00e1nkou alebo pikantnej\u0161iu.<br>Pri \u010fal\u0161om roben\u00ed prid\u00e1m ako posyp,  ur\u010dite aj jarn\u00fa cibu\u013eku \u2013 vraj to ve\u013emi vylep\u0161ilo chu\u0165.<\/p>\n\n\n\n<p>Nerobila som z celej d\u00e1vky, len z dvojtretinovej.<br>A tak aj p\u00ed\u0161em recept.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Suroviny<\/strong><\/p>\n\n\n\n<p>Na tri porcie, pribli\u017ene 18 kusov budeme potrebova\u0165 :<\/p>\n\n\n\n<p><strong>Na plnku<\/strong><br>180 gramov uvaren\u00e9 \u00faden\u00e9 m\u00e4so<br>1 mal\u00e1 cibu\u013ea<br>1 mal\u00fd varen\u00fd zemiak pribli\u017ene 50 gramov<br>\u010derstvo drven\u00e9 korenie<br>so\u013e pod\u013ea potreby<br><\/p>\n\n\n\n<p><strong>Na be\u0161amel<\/strong><br>1 orech maslo<br>1 rovn\u00e1 polievkov\u00e1 ly\u017eica hladk\u00e1 m\u00faka<br>80 gramov sladk\u00e1 smotana<br>trochu soli<\/p>\n\n\n\n<p><strong>Na cesto<\/strong><br>380 gramov varen\u00e9 prelisovan\u00e9 zemiaky<br>220 a\u017e 240 gramov polohrub\u00e1 m\u00faka<br>1 mal\u00e9 vajce<br>1 \u010dajov\u00e1 ly\u017ei\u010dka so\u013e<br>1 polievkov\u00e1 ly\u017eica olej (volite\u013en\u00e9)<br>okr\u00fahla forma na vykrajovanie s priemerom 9 cm<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Postup<\/strong><\/p>\n\n\n\n<p>De\u0148 dopredu uvar\u00edme pol kila zemiakov vo ve\u013emi slanej vode. Ja d\u00e1m pokojne aj dve polievkov\u00e9 ly\u017eice soli. Po uvaren\u00ed zlejeme vodu a nech\u00e1me ich vychladn\u00fa\u0165 do druh\u00e9ho d\u0148a.<\/p>\n\n\n\n<p>Ideme urobi\u0165 n\u00e1pl\u0148.<br>Uvaren\u00e9, \u00faden\u00e9 m\u00e4so pomelieme , alebo nakr\u00e1jame na ve\u013emi mal\u00e9 k\u00fasky. Ja som ho zmixovala v robote a rovno som k nemu prihodila aj jeden pribli\u017ene p\u00e4\u0165desiatgramov\u00fd uvaren\u00fd a o\u0161\u00fapan\u00fd zemiak.<\/p>\n\n\n\n<p>Mal\u00fa cibu\u013eu o\u010dist\u00edme a nakr\u00e1jame na jemno.<br>Rozohrejeme maslo a cibu\u013eu pomaly udus\u00edme do sklovita.<br>Cibu\u013eu zasypeme hladkou m\u00fakou, kr\u00e1tko orestujeme a zalejeme sladkou smotanou. Mie\u0161ame, k\u00fdm be\u0161amel nezhustne. Prid\u00e1va sa preto, aby plnku zvl\u00e1\u010dnil, stiahol ostr\u00fa dymivos\u0165 \u00faden\u00e9ho m\u00e4sa a pomohol jej dr\u017ea\u0165 tvar. Pr\u00edli\u0161 hust\u00e1 plnka by pri plnen\u00ed piroha,  mohla roztrhn\u00fa\u0165 cesto, pr\u00edli\u0161 mastn\u00e1 by zasa premastila vn\u00fatro piroha a okraje by sa nezatvorili. Zemiak poskytne plnke ide\u00e1lne proporcie. <\/p>\n\n\n\n<p>Plnku odlo\u017e\u00edme bokom a ideme vypracova\u0165 cesto.<\/p>\n\n\n\n<p>Zemiaky o\u0161\u00fapeme.<br>V\u010dera som dala vari\u0165 pol kila a dnes mi po o\u0161\u00fapan\u00ed ostalo 415 gramov. Jeden zemiak som odobrala do plnky, tak\u017ee \u010dist\u00e1 v\u00e1ha bola 380 gramov.<\/p>\n\n\n\n<p>Zemiaky prelisujeme. Ak nem\u00e1te lis, pou\u017eite str\u00fahadlo s jemnou slzi\u010dkou.<br>Na dosku nastr\u00fahame uvaren\u00e9 zemiaky, prid\u00e1me so\u013e a jedno mal\u00e9 vajce (moje malo pred rozbit\u00edm okolo 50 gramov).<br>Prisypeme 220 gramov polohrubej m\u00faky a za\u010dneme vypracov\u00e1va\u0165 zemiakov\u00e9 cesto.<\/p>\n\n\n\n<p>Pri zemiakovom ceste je v\u017edy rozp\u00e4tie m\u00faky r\u00f4zne \u2013 z\u00e1vis\u00ed od kvality a vlhkosti zemiakov. Spr\u00e1vne vypracovan\u00e9 cesto sa pri va\u013ekan\u00ed netrh\u00e1 a nelep\u00ed sa ani na val\u010dek, ani na podlo\u017eku. Sta\u010d\u00ed dosku len jemne popr\u00e1\u0161i\u0165 a povrch cesta tie\u017e. D\u00e1 sa zdvihn\u00fa\u0165 bez roztrhnutia.<br>Ak je cesto pr\u00edli\u0161 m\u00e4kk\u00e9, postupne prisypeme m\u00faku a zapracujeme ju.<\/p>\n\n\n\n<p>Ja som cesto asi raz podvihla a raz podsypala, tak\u017ee som minula aj t\u00fdch dvadsa\u0165 gramov m\u00faky, ktor\u00e9 som mala pripraven\u00e9 bokom.<\/p>\n\n\n\n<p>Cesto rozva\u013ek\u00e1me na hr\u00fabku dva a\u017e tri milimetre.<br>Vykroj\u00edme kolieska. Myslela som, \u017ee ich bude dvadsa\u0165, ale vykrojila som len osemn\u00e1s\u0165. Mne sa zdala chu\u0165ovo v poriadku, ale po uvaren\u00ed bola jemnej\u0161ia, ne\u017e som chcela. Plnku ur\u010dite dostato\u010dne oso\u013ete a okore\u0148te.
